Overview

The sunflower is a North American native, cultivated for food long before it became an ornamental. Indigenous communities of the Great Plains ground the kernels into meal, pressed them for oil, and carried them as travel food. When the plant reached Europe and later Asia, it was the oil that made it famous — but the kernel remained the more complete food.
