Most lunchboxes come back half-eaten for one of three reasons: the food is unfamiliar, the textures change by noon, or there is simply too much of it.
Start with one anchor of protein, one slow carbohydrate, one crunchy element and one small sweet. When those four are present, children tend to finish the box without prompting.
Rotate within the framework rather than replacing it. Familiarity is what keeps a lunchbox coming home empty.
